Meals for the (rest of the) Week

Well, normally it would make sense to do these posts on a Sunday or Monday, but time got away from me and we ended up having leftovers to eat up yesterday anyway. (This may or may not have been due to the fact that I still have a cold and we ordered out on Sunday. Shhhhh). Anyway, here's the plan for the week:

Tuesday: Fried rice (a staple in our house- aka use up veggies!)
Wednesday: Meatball pizza and salads (no recipe, just winging it)
Thursday: leftovers
Friday: special breakfast: Crock Pot Breakfast Casserole (this was the one recipe we didn't get to during my birthday week, and I want to try it!)

Dinner: Lightened Up Chicken Enchiladas (which might become pork enchiladas, since that's what is already in the freezer)

Those enchiladas... I could eat enchiladas every day! (and sometimes I do!)
